Sharing the latkes (updated)

You guys have left so many nice comments on my last couple of posts: thanks! I'm so lucky to have such wonderful readers.

I meant to include some latke links in my last post. Perhaps Elswhere's milennial latke recipe will help Arwen with her frying problem (although you're on your own with the falafel, a food I can't make, either). The nerdily inclined will enjoy constitutional perspectives with their latke recipe. I'll be following Elswhere's directions to make the latkes in advance for our Hanukkah/Solstice/Jul party this evening. Now, off to clean up the house!

Updated to add: Elswhere's latkes are delicious! She uses a grater; I used a food processor. It took me about an hour and a half to make the latkes, even though I forgot to put the water on to boil until after I'd grated the potatoes. I didn't trust things to take a shower while the latkes were cooking, but I did a lot of clean up while they were cooking. Slow frying seemed to make a difference, and I liked the way they fried up a bit better on the cast iron griddle than on the no stick pan. And I realized late in the cooking that making more small latkes is a better way to feed a crowd than making fewere big ones. oops. Even so, we had some left over. The batter got increasingly watery and towards the end I was using a slotted spoon to scoop. Yum!

Happy Hanukkah! Off to a family Hanukkah brunch myself...I wonder if there will be latkes! (It's actually not a given.)

Oooh. Elswhere's recipe was fun just to read. Now I will be brave and venture into latkes again.

We parboil our potatoes too. They came out good!

Thanks for the link, and for reminding me of my own recipe! I'm glad people are enjoying the latkes. I made a slightly altered version this week because for maybe the first time ever I was making latkes for just our family, not a whole huge partyful of people. It was very relaxing.
